Easter treats for the grown-ups
If you’re looking for a super easy but uber-decadent adult Easter treat, you can’t go past this cheats Ferrero Rocher Cake. The cake bit doesn’t really matter – you can even use store-bought because you won’t recognise it once it’s had the Ferrero treatment! Just make a simple filling by mixing nutella with chopped chocolate wafer biscuits and then loosening the mixture with a little cream and your favourite liqueur (Frangellico works well). How much you make depends on how many layers you’re going to have and how much of it you eat before it gets to the cake. Split your cake into 2 or 3 layers then spread the filling between each layer and over the top and sides of the cake. Now just top with Ferrero Rocher chocolates and enjoy - and don’t think about the calories until after Easter!
Easter treats for the kids
If you want the kids to get busy in the kitchen, a great place to start is with some Crispy Easter Nests. Simply melt 225 grams of plain chocolate pieces with 2 tablespoons of golden syrup and 50 grams of butter by placing in a bowl over a pot of gently simmering water. Once it’s all melted together, hand it over to the kids to add 75 grams of cornflakes or rice crispies. Place into paper cases in a small muffin tin and make a depression in each to form nests then chill for at least an hour. Once chilled, add a small amount of sweetened coconut to the nests and top with chocolate mini eggs or smarties.
An easy Easter treat that goes a long way (but can disappear in moments) is Salted Caramel Easter Popcorn. Simply mix 1 cup of sugar, 1/2 teaspoon of salt and 1/4 cup of water in a small pan then bring to the boil over a medium – high heat. Boil without stirring for around 10 minutes or until the mixture is amber in colour. Remove from the heat and very slowly add 1/3 cup cream. Stir until smooth then add 1/2 teaspoon of vanilla extract and 1 cup of miniature marshmallows. Stir until marshmallows are melted then pour over 6 cups of plain popped popcorn and 2 cups of chopped salted pretzels and mix to combine. Finally stir in some M&M’s, transfer to a large baking sheet and sprinkle with sea salt. Leave until completely cooled and then dig in!
Healthy Easter treats
Tasty Easter treats don’t have to be laden with sugar, carbs and calories! Try a decadent but delicious Vanilla-Lemon Fruit Parfait for four by mixing 1 cup of plain low fat yoghurt with a packet of fat-free vanilla pudding mix, 2 tablespoons of lemon curd and 1/2 a teaspoon of vanilla extract.
Next, in a separate bowl mix together 2 tablespoons of honey, 1 tablespoon of lemon juice and the zest of 1 lemon, then add 3 cups of your favourite fruit (berries work best) and mix together. Assemble in layers in parfait glasses (or any glass will work). Delectable, creamy, refreshing and just 176 calories per serve!
Greek Yoghurt Bark is another healthy Easter treat that is simple to make and mouth-watering to eat. Simply mix 4 cups of low fat greek yoghurt with 2 tablespooons of honey and 1/2 teaspoon of vanilla extract. Spread on a baking sheet lined with parchment paper and sprinkle over your toppings – chopped nuts, goji berries, shredded coconut, a handful of chopped chocolate pieces, whatever takes your fancy.
